GASTRONOMY "EXOTIC FOOD TASTE IN CORDILLERAS" PINIKPIKAN Pinikpikan is a meal from the Philippines' Cordillera area made with chicken or duck. The native Igorot people prepare pinikpikan by beating a live chicken to death with a stick before frying. Pinikpikan, a chicken dish that is rooted in the native ritual of reading signals from the gods to determine one’s course of action. Sometimes humorously called ‘Battered Chicken,’ native N" "PINIKPIKA chickens, smaller in variety with darker, tastier meat are beaten with a wooden and grilled over open fire. Etag is added to the brew. ETAG Etag is the general term used in Cordillera about the native's traditional way or preserving pork. A slab of a big slice of pork is cured in salt for about a week (or longer) then air-dried under the sun or smoked for several week or month. Etag or Itag is salted meat, cured and aged underground in an earthen jar. The flavor is comparable to blue cheese but is much oilier and flavorful after it’s cooked. It is also used as an "ETAG" ingredient to flavor the Pinikpikan. PINUNEG Pinuneg is the Igorot sausage. It is similar to the longganisa and the common sausage available in the market. Their only differences are the contents and make up. Pinuneg uses the pig’s blood, large intestine and spices.Similar to the Filipino dinuguan, Pinuneg is a native blood sausage composed of minced pork and innards mixed with cooked rice (usually the red variety known as kintoman), salt, vinegar, garlic and other flavors and then stuffed into clean animal intestines. ATTRACTION BANAUE RICE TERRACES The Banaue Rice Terraces are a National Cultural Treasure of the Philippines and are considered to be the 8th Natural Wonder of the World by many Filipinos. The view is spectacular, majestic and inspiring. The Banaue Rice Terraces are located on the mountains of Ifugao and were carved there about 2,000 years ago by the ancestors of the present day Philippines. It is said that they were built by hand and were used to plant rice. SUMAGUING CAVE Sumaguing Cave has the biggest chamber, earning its nickname “The Big Cave.” Inside are countless rock formations slowly shaped by nature over thousands of years. These rock formations mimicking familiar shapes are the highlight of this spelunking adventure. Some of these formations include the bear, elephants, turtle head, and chocolate cake. It is perhaps these shapes (and the overall experience) that tourists keep coming back to Sagada for. Sumaguing Cave is probably the most popular of all tourist attractions in town. MOUNT PULAG Mount Pulag is famous for its "sea of clouds" and its exceptional view of the Milky Way Galaxy at dawn, which has attracted many tourists who wish to see the "other-worldly" scenery. The entire mountain is believed to be the home to the tinmongao spirits and is the sacred resting ground of the souls of the Ibaloi people and other ethnic peoples in the area. KABAYAN MUMMY BURIAL CAVE The Fire Mummies of the Philippines, also known as the Kabayan Mummies, Benguet Mummies, or Ibaloi Mummies, are a group of mummies found along the mountain slopes of Kabayan, Benguet, a town in northern Philippines.
