Find the Why Be present & listen, care deeply about the guest, and use our HAK- Act on the Facts and Know the Notes. The goal is to uncover the underlying motivations and needs of the guest for dining out. Looking to celebrate? Experimental foodie? Intimate Anniversary? Quick healthy lunch? First-time Guest? Feed the Why Once the why is identified, you can make recommendations or share stories that directly address and fulfill those needs. Use hospitality to connect emotionally with guests and provide personalized suggestions that enhance their dining experience. By sharing relevant information, such as stories, or descriptive language about dishes, you can create a deeper connection with guests and make their visit memorable. The _____ is my favorite! It’s a place where people come to be catered to, and to connect with delicious food and exciting new drinks. As creators of connection, ask yourself: Who is served by the work you do? MENU ICONS & ALLERGY PROTOCOL MENU ICONS ALLERGY PROCEDURE 1. Identify allergies during order taking. Server/bartender ask all tables if there are any allergies or dietary restrictions they should be aware of. 2. Discuss options, ring in and place on hold. Server/bartender can use the Allergy Guide located on the iPad to help select a dish that does not contain specific allergens or discuss accommodations that would need to be made to dishes. Once decisions have been made, ring in the item, highlighting the allergy and the modifications discussed. 3. Manager consults and confirms with the guest. Using the resources of the Allergy Guide, the manager will confirm with the server what the guest has ordered. If the guide is not clear, the manager will confirm directly with the Sous Chef. The manager will approach the table, discuss the allergy and modifications, ensure the guest is clear on what they are receiving, and provide assurance to the guest that we treat allergies with the utmost importance. 4. Send order through to the kitchen. The manager will review the order in the POS and confirm it can be sent or highlight additional modifications needed. 5. Reiterate allergy to the food runner and guest. Expo will ensure the food runner is aware of the allergy. The food runner will verbally state the allergy and modifications to the guest when the item is delivered to the table.
