Food Microbiology 2010214 Dr Ashraf Khamaiseh, PhD Assistant Professor of Food Science Dept. of Clinical Nutrition and Dietetics Faculty of Allied Medial Sciences Applied Science Private University, 2023 1 1 What is Microbiology? Micro - too small to be seen with the naked eye (cannot seen by naked eye). Bio - life ology - study of Microbiology is the study of very small living organisms (microorganisms) that cannot seen by naked eye. 2023-v1 DR. ASHRAF KHAMAISEH & MANAL AYYASH ASU/ FACULTY OF ALLIED MEDICAL SCIENCES 17 Bacterial Morphology 2023-v1 DR. ASHRAF KHAMAISEH & MANAL AYYASH ASU/ FACULTY OF ALLIED MEDICAL SCIENCES 18 Nomenclature Carolus Linnaeus established the system of scientific nomenclature in 1739. The basic taxonomic group in bacteria, yeasts, and molds is the species, and each species is given a name. Each organism has two names → Binomial nomenclature: Genus + specific epithet (species) (adjective). Italicized (or underlined), genus Capitalized, “latinized”, used worldwide. May be descriptive or honor a scientist. Examples Staphylococcus aureus (S. aureus) Escherichia coli (E. coli) Streptococcus pneumoniae (S. pneumoniae) 2023-v1 DR. ASHRAF KHAMAISEH & MANAL AYYASH ASU/ FACULTY OF ALLIED MEDICAL SCIENCES 19 Nomenclature Examples: Saccharomyces cerevisiae Penicillium roquefortii Listeria monocytogenes Lactobacillus acidophilus. A bacterial species can be divided into several subspecies (subsp. or ssp.) if the members show minor but consistent differences in characteristics. Under such conditions, a trinomial epithet (subspecific epithet) is used (e.g., Lactococcus lactis ssp. lactis or Lactococcus lactis ssp. cremoris). 2023-v1 DR.
