The incubation period ranges from 8 to 72 hours. Symptoms can last up to a week. Salmonella infections vary from mild to severe, and are occasionally fatal. Fatalities are more often seen in susceptible populations, which include infants, the elderly and the immuno-compromised. In the United States of America between 1985 and 1991, there were 54 reported S. Enteritidis outbreaks occurring in hospitals or nursing homes, accounting for 90% of all Salmonella-associated deaths, but only 12% of all cases.
