We're excited to have you on board :) Matt & Sar 2 Contents Open Bar Checklist - 4 Close Bar Checklist - 5 Bar Supplies: Stock & Cleaning Products - 6 Bins - 7 Cocktails - 8 Shooters - 9 Drinks Specials - 10 Wine Measures - 11 House Spirits - 12 House Spirits: Refilling - 13, 14, 15 All Inclusive - 16 RSA - 17, 18 Radios - 19, 20 First Aid - 21 3 Open Bar Checklist Clock into Deputy if you haven’t already Wipe down bar, screens, Eftpos machines if necessary with spray and a microfibre cloth Top up all alcohol stock to par level Remove rubber caps from bottles and place in tub Top up straws, napkins and plastic cups Get bar equipment ready - bar blade, jiggers, shot glasses Put frequently used spirits in speed rail Get 4 Shooter / 4 Cocktail batch jugs from fridge Top-up batch jugs using Cocktail guide if necessary Setup two bins - one recycling, one general waste Sign into Lightspeed and make sure POS is connected and charged Lastly, grab ice and fill-up ice wells 4 Close Bar Checklist Pack away all bottles Thoroughly wipe down all surfaces: bar, screens, Eftpos machines Soak and hang bar mats Top up all alcohol stock to par levels Place rubber caps on speed pourers Top up straws, napkins and plastic cups Wash bar equipment and place in bucket of soda water: jiggers, bar blades, shot glasses and coke gun nozzles Put frequently used spirits in speed rail Put Cocktail / Shooters in fridge Take bins out back of galley (kitchen) Take empty spirit bottles downstairs to store room for re-filling Remove floor mats and mop floor 5 Check-in with Matt or Sar for bar check & further instructions Bar Supplies: Stock and Cleaning Products All bars should have the following stock and cleaning supplies. If you are running low the below table outlines the location for each item: Item Re-stock Location Microfibre Cloths Galley / Kitchen - by entrance General Purpose Spray Galley / Kitchen - by entrance Bin Liners Galley / Kitchen - by entrance Straws / Napkins Galley / Kitchen - under desk In stock room, downstairs from Cups Galley / Kitchen. Underneath stairs In stock room, downstairs from Spirit Bottles Galley / Kitchen. Packaged Beer / Cider / Red Bull / Walk-In Fridge. Downstairs at front of Water boat Ice machine in galley or in freezer Ice downstairs 6 Bins Bottles and cans Pizza boxes / Plastic cups We recycle all bottles & cans through the return & earn scheme and recieve $0.10 per container. This goes towards our Christmas party and more importantly is environmentally friendly. Bottles and Cans go into the clear plastic bags. All other general waste, including pizza boxes, plastic cups and spirit bottles go into the black bin bags. Some cross contamination will occur but we need to try and avoid this as much as possible. At the end of the shift: all cardboard and general waste (black bin bags) goes into the red general waste bins. all clear bags go into the recycling bins 7 Cocktails All our cocktails and shooters are batched to ensure fast service. The batch guide can be found in the black folder on every bar. Cocktails are served in the larger plastic cups. You simply: Add ice to the cup Add 45ml of the pre-batch liquid Top with the respective juice or mixer as stated on the label here: 8 Shooters All shots must be served and consumed at the bar with the exception of roaming shot trays. They are served in the plastic shot glasses found on the bar. Please serve these responsibly. 9 Drinks Specials We run a number of drink specials that you need to keep note of. These can be found on the display screens on the bar as well as on Lightspeed. Please keep updated with the latest specials. 10 Wine Measures All of our wine comes in a standard size, we don’t offer a small or large. All wine - sparkling, red, white, rose, should be measures using the 150ml jigger as pictured to ensure consistency. 11 House Spirits Our house range for Vodka, Rum, Dark Rum, Whisky and Tequila is 100 Souls which is produced at their Australian based distillery. Our core range makes up a significant portion of our bar sales, hence they need to be thoroughly stocked. To meet the demand we utilise 20L kegs and a Co2 gas system to dispense the spirits into their respective empty bottles. For that reason, all empty spirit bottles must be kept to be refilled. Below outlines the procedure for refilling the bottles using the pressurised gas system. 12 House Spirits: Refilling Gas Cylinder Alcohol Keg To dispense alcohol from the keg you will (90% of the time) simply identify the alcohol on the keg label and fill the respective alcohol bottle with the dispenser nozzle as pictured below. You will need to make sure the gas is turned to ‘Open’, using the valve otherwise no alcohol will dispense. Once you are done re-filling, close the valve. Filling a bottle Open the valve / 13 Close when finished House Spirits: Refilling If the keg is empty or you need to re-fill a different spirit you will need to close the valve and remove the gas tube and the dispenser tube by lifting the gray caps. WHEN RE-ATTACHING THE TUBES TO THE NEW KEG, THE GAS CYLINDER TUBE MUST ATTACH ONTO THE ‘IN’ SOCKET AS PICTURED IN THE DISPENSER TUBE THEREFORE ATTACHES ONTO THE ‘OUT’ SOCKET OUT 14 House Spirits: Refilling Once everything is re-attached, turn the valve open and you can start dispensing. Remember to close the valve once you’re finished. 15 All Inclusive All inclusive cruises are where the clients have pre-paid for drinks packages. They are sometimes identifiable by wristbands or drinks cards and we serve two drinks per person at a time. If a charter is all-inclusive it will be clarified by Matt in the pre-charter WhatsApp message. Typically they include the following: - House spirits and mixers House beers / cider / wine Soft drink Pizza They do not include, unless specified, the following: - Red Bull Premium Spirits Canadian Club 16 RSA It is compulsory to have a valid and in-date RSA whilst you are employed at Inception Cruises. We also need it on file incase we are boarded and inspected by Police NSW or Liquor and Gaming. If you haven’t done so already, please add your competency card to the Service NSW app. It’s very easy and only takes 5-minutes. You simply logon to the app, go into ‘wallet’, then ‘add’ and press ‘RSA/RCG Competency Card’ and input your details. Once complete, please send a screenshot of your RSA to Matt on WhatsApp so we can keep a record. 17 RSA As a licensed venue we take our RSA responsibility very seriously and actively monitor our patrons for signs of intoxication. This starts with you! Bar staff directly interact with significantly more patrons than the security or licensee. In this you are essentially the eyes and ears of the business. We actively encourage you to implement some of following measures if you believe someone to be intoxicated. Consider their Balance, Speech, Behavior and Co-ordination. What Can You Do? 1. Put them on a water break 2. Refuse service and cut them off 3. Add a detailed description to Bar Crew Whatsapp Group 4. Radio for security / Matt / Sar to assist if they are heavily intoxicated or are failing to quit 5. Let Matt / Sar / security know if you believe RSA is an issue across many patrons as we can implement the following measures: What Can the Venue do? 1. Put patrons in a timeout and offer them food and water 2. Implement a pause / water break across all bars 3. Disembark patrons that are severely intoxicated 4. End the cruise early in worst case scenario Please note we will completely support and appreciate any 18 judgement or observation you make. We want to have active communication, especially in regards to RSA. Radios Our radio communication is vital to the smooth and safe operation of Inception. It is therefore mandatory for every bar to have a radio and to follow a closed loop communication process. We use radios to communicate with the bar back for stock / ice as well as with Matt or Sar for security. The below outlines how we should be using the radio to ensure effective communication. Remember, speak loud, slowly and clearly especially when you are busy / there is something urgent to report, such as a fight. When Calling Someone When calling announce the person’s You: “Copy Matt, Copy Matt” name like this: Matt: “Yes Copy” Wait for the person to respond: Then, express and repeat your You: “I have a heavily intox message: patron on level 1, that’s a heavily intox patron on level 1 The person will then close the Matt: “Copy, heavily intox patron communication: on level 1. I’m on my way” 19 Radios When Answering A Call (pretend you are Liv in this scenario) Listen out for your name, it should be Matt: “Copy Liv, Copy Liv” announced like this: Respond with ‘Copy’ in a loud and clear voice: Liv: “Yes Copy” Wait for the caller to express their Matt: “I am boarding the VIP message: guests now” Repeat the message to show Liv: “Copy, VIP guests are boarding you understand and now” close the communication: We carry out radio checks before every charter to ensure all bars are actively listening. It’s really important you get a radio as soon as you board so we can all communicate effectively. 20 First AID The first aid kit can be found in the galley / Kitchen. If you require medicine, such as painkillers, you must let the Captain know so that he can maintain his records. If you require assistance / feel unwell please let Sar, Matt or Troy know immediately. 21
