Open Bar Checklist
- Clock into Deputy if necessary
- Wipe down bar surfaces, screens, and EFTPOS machines with a microfiber cloth
- Top up alcohol stock to par level
- Remove rubber bottle caps and place them in a tub
- Top up straws, napkins, and plastic cups
- Prepare bar equipment (e.g., bar blade, jiggers, shot glasses)
- Arrange frequently used spirits in the speed rail
- Fill shooter and cocktail batch jugs from the fridge
- Adjust batch jugs using the cocktail guide as needed
- Set up two bins—one for recycling and one for general waste
- Connect to Lightspeed POS system and ensure it's charged
- Fill ice wells
Close Bar Checklist
- Pack away all bottles
- Thoroughly wipe down all bar surfaces, screens, and EFTPOS machines.
- Soak and hang bar mats
- Top up alcohol stocks to par levels
- Place rubber stoppers on speed pourers
- Top up and restock napkins, straws, and cups
- Clean bar equipment (place in soda water bucket)
- Place frequently used spirits on the speed rail
- Place cocktails and shooters in the fridge
- Collect and remove trash from the galley
- Move empty alcohol bottles to the storage room for re-filling
- Remove floor mats and mop the floor.
- Check in with Matt or Sar for a bar check and further instructions
Bar Supplies: Stock & Cleaning Products
- Â Microfibre cloths are stored in the galley/kitchen.
- General purpose spray is stored in the galley/kitchen.

- Straws and napkins are stored in the galley/under the desk
- Cups are stored in the galley/kitchen downstairs

- Packaged beer/cider/Red Bull/water is stored in the walk-in fridge.
- Ice is stored on the ice machine in the galley or the freezer downstairs
Bins
- Recycle bottles and cans ($0.10 per container for Christmas party funds) in clear plastic bags.
- Place pizza boxes, plastic cups, and spirit bottles in black bin bags.
- At the end of the shift, move all cardboard and general waste (black bin bags) into red general waste bins; move clear plastic bags to recycling bins.
Cocktails
- All cocktail and shooter recipes are batched for fast service.
- Guides are available in black folders at each bar.
- Cocktails are served in larger plastic cups with ice and the appropriate mixers
Shooters
- All shots are served at the bar, except for roaming trays.
- Shots are served in plastic shot glasses.
- Proper service is expected.
Drinks Specials
- Multiple drink specials run at various times.
- Track specials via bar screens or Lightspeed.
Wine Measures
- All wine is served in a standard size (150ml).
- Using a 150ml jigger, measure wine.
House Spirits
- Vodka, rum, dark rum, whisky, and tequila are 100 Souls, made in an Australian distillery.
- Core range makes a significant portion of sales and should be stocked with 20L kegs and the Co2 gas system.
- Empty bottles are kept for refilling
House Spirits: Refilling
- 90% of time, dispense alcohol by identifying the keg label and filling respective bottles using the dispenser nozzle.
- Ensure the valve is on "Open" before dispensing.
- Close the valve after dispensing.
- If keg is empty, close valve and remove tubes by lifting grey caps.
- Reattach the gas cylinder tube to the "in" socket.
- Reattach the dispenser tube to the "out" socket.
- Turn valve "open" when ready.
- Close valve once finished.
All Inclusive
- Clients have pre-paid for drinks packages (often by wristbands or cards).
- Two drinks per person at a time.
- Details of all-inclusive provisions should be confirmed with Matt through pre-charter WhatsApp messages.
- Typically incudes house spirits & mixers, beers/cider/wine, soft drinks, and pizza
- Â Excludes Red Bull, premium spirits, and Canadian Club unless otherwise specified
RSA
- Valid and in-date RSA is mandatory for all staff.
- Keep record of RSA cards on file.
- Add RSA cards to Service NSW app for easy access.
- Take screenshot and send to Matt on WhatsApp.
RSA Continued
- Actively monitor patrons for signs of intoxication.
- Interact with patrons; bar staff are the eyes and ears of the business; use measures if a patron is intoxicated.
- Implement water breaks/timeouts/food & drinks.
- Disembark intoxicated patrons if necessary.
- Offer support.
Radios
- Radio communication is crucial for smooth bar operation.
- Follow a closed-loop communication process/procedure.
- Communicate with the bar back (stock & ice) and security (Matt/Sar)
- Speak clearly and slowly, particularly in busy situations
First Aid
