    Study Notes

    Fundamentals of Packaging

    • Packaging is the art, science, and technology of transporting goods from their source to the place of consumption at the lowest possible cost.
    • Packaging has four main functions: Containment, Protection, Facilitate Handling and Promote Sales.

    Functions of Packaging

    • Containment: Packaging defines the volume or weight of a product at minimal cost.
    • Protection: Protecting products during transportation and storage. This includes instances when goods are fragile or need to be protected from the elements or potential harm.
      • Examples include protecting ceramics, food items and handling of produce.
    • Facilitate Handling: Simplifying the process of packaging and moving goods throughout the supply chain.
    • Promote Sales: Packaging can serve as a marketing tool to attract customers; good packaging can boost sales.

    Classifications of Packaging

    • Primary: Direct contact with the product
    • Secondary: Contains multiple primary packages; can be used in retail outlets
    • Tertiary: Made up of a number of secondary packages.

    Types of Packaging Materials

    • Glass: Benefits include: non-reactive, clear, recyclable, and inexpensive.
    • Metal: Benefits include: strong and lightweight, impervious, heat-resistant and safe. Drawbacks include corrosion and easily dented.
    • Paper: Benefits include: readily available, cost-effective, easy print surface, and biodegradable. Drawbacks include difficulty in handling, moisture absorbent and potential food contamination.
    • Plastic: Lightweight, flexible, molded, barrier against water, and recyclable. Drawbacks include odor/taste absorption, compatibility problems and environmental issues.
      • Different types of plastic exist including: PET, HDPE, PVC, and LDPE.
    • Composites: 2 or more materials combined, providing enhanced functionality but difficult to recycle.

    Packaging Technology

    • Vacuum Packaging: Removing air from packaging to extend shelf life and reduce oxidation.
    • Active Packaging: Incorporating materials in the packaging that react with the product to improve shelf life or maintain quality.
    • Smart Packaging: Packaging with sensors that react to changes in the product.
    • Modified Atmosphere Packaging (MAP): Packaging that controls the atmosphere around the product to extend shelf life.

    Sustainable Packaging

    • Driven by growing demand and environmental concerns.
    • Legislation to control single-use plastics promotes recycling.
    • Includes different clusters: green, circular, bio, and other sustainable packaging.
    • Emphasis on using biodegradable and compostable materials, along with lessening the environmental footprint.

    Packaging Materials and Their Properties

    • Important elements for consideration when considering product packaging include: product safety, cost, and environmental friendliness.

    Additional Points

    • The presentation includes case studies of dried guava and green chili sauce, highlighting ingredients, characteristics, preservation methods, and shelf life.
    • Specific packaging technologies are highlighted including vacuum packaging, active packaging, smart packaging, and modified atmosphere packaging.
    • The presentation also covers labeling requirements and the need for an appropriate consideration of packaging, as well as environmentally-sustainable packaging.
    • Aseptic packaging and the valorization of agricultural and food waste are also detailed.
