Saliva Functions
- Saliva does NOT emulsify lipids. It moistens and lubricates food, aids in starch digestion, enables the sense of taste, and contains enzymes that work towards killing bacteria.
Bariatric Surgery Effects
- Post-bariatric surgery with a reduced stomach volume, patients will have a reduced ability to store ingested foods, requiring smaller, more frequent meals.
- Their decreased stomach volume will lead to a reduced ability to form food into a bolus.
- The patient's ability to digest proteins and amino acids will NOT be entirely affected by the surgery.
