All these things have various commonalities such as: 1. They are all shelf-stable foods. 2. Generous portion sizes. 3. Are ideal for large groups. The phrase \"continental breakfast\" first appeared in the United Kingdom in the mid-nineteenth century. A \"continental breakfast\" is the type of breakfast you\'d find in areas like France alongside the Mediterranean. It\'s a lighter, more delicate take on the traditional full English breakfast, which includes eggs, bacon, sausage, toast, beans and roasted mushrooms, and tomatoes. (htt) While we will not be discussing the true meaning of a continental breakfast in this microsession, we will be discussing common dishes served in hotels and restaurants for breakfast. These items are often served with a lot of the elements dsicussed above. Potato Preparations =================== Potatoes are an extremely versatile item, such that one could find a new breakfast preparation every week. Below are some of the popular breakfast preparations for potatoes. Hash Browns ----------- Finely julienned potatoes are used to make hashbrowns, which are then fried till golden brown. They\'re sold frozen in bags at the grocery store for convenience, but they\'re even better when made from home. Either a box grater or the grate attachment of a food processor would work. The trick to success involves boiling the potatoes until barely tender so they don\'t fall apart when grating. Crispy hashbrowns are one of the most beloved ways of cooking potatoes. Perfect Fries ------------- French fries, also known as chips, finger chips, or fries, are a type of side dish or snack made from deep-fried potatoes chopped into various shapes, particularly thin strips. Fries are frequently salted and served with condiments such as ketchup, mayonnaise, or vinegar. For crispy fries, use a waxy potato variety such as red potatoes or round red potatoes. Small young potatoes might also work well if they are in season. Onions and a dash of paprika provide even more flavour. Muffin Tin Potato Stacks ------------------------ Muffin Tin Potato Stacks are simply thinly sliced seasoned potatoes placed vertically inside a muffin tin and baked. Stack potato pieces, cheese, and flavourful seasonings in individual servings to make a delicious potato side dish. A muffin tin makes the perfect pan for potato and cheese stacks. Prepare these beforehand for a quick and easy breakfast or brunch side. Air Fryer Potatoes ------------------ This is a lighter version of the classic skillet fried potatoes; this air fryer version comes out crispy on the outside and creamy on the inside. Paprika, garlic powder, and just a hint of Parmesan cheese gives them a delicious flavour that tastes great for breakfast or any time. (spruce, n.d.) On Toast ======== The breakfast version of On Toast can be elevated from just avocado on toast to something more. Avocado on Toast ---------------- Avocado toast began as a trendy snack but has now become a staple for many. It\'s easy to understand why: crispy whole grain bread and mashed avocado go together well, providing the ultimate crunchy, creamy mouthful. The topping options are also limitless. For avocado mash and toppings, use multigrain bread or robust white bread. Incorporate lemon juice for a citrus infusion and to reduce the browning of the avocado. The topping options are also limitless, below are some variations of the classic. - Greek Avocado Toast: Lemon juice, crumbled feta, and sliced cherry tomatoes combine to make a salty, tangy garnish that pops with a hint of sweetness. - Poached Egg: Avocado toast reaches new heights with a perfectly cooked egg, complemented by hot sauce and a sprinkle of sea salt. - Creamy Sriracha, Radish, and Scallion: For extra crunch and a spicy kick, add sliced scallions, radishes, and a drizzle of Sriracha mayo. - Tomato Basil Balsamic: A classic among Italians; sliced red tomatoes, balsamic vinegar, and shredded basil leaves. - Garlic: Rub your multigrain toast with a cut garlic clove before topping with the mashed avocado. - Guacamole: Top your avocado toast with guacamole instead of your basic avocado mash. Smoked Salmon & Cream Cheese Bagel ---------------------------------- Another classic savoury combination is smoked salmon and cream cheese on a sliced bagel. Salmon that has been smoked has gone through a curing process and has been hot- or cold-smoked. Smoked salmon is available in both pre-sliced and un-sliced packaging. Most hotels and restaurants tend to purchase it pre-sliced to maintain hygiene and reduce labour efforts. A plain sesame bagel is traditionally sliced and toasted. Fresh cream cheese is spread across both slices of bread and slices of salmon are laid on top of the cream. The bagel is garnished with dill (to add freshness), sliced onions and some capers to bring in a tart flavour. Garnishing tomato or cucumber is optional. Avocados are another common addition to this classic bagel mix. (spruce, n.d.) Banana Peanut butter & honey ---------------------------- Spreading peanut butter on a slice of toast with banana slices and a sprinkle of honey on top is the easiest sweet-on-toast recipe. Similarly, most fruits can be paired with a spread of some sort. You can even elevate the flavour by caramelizing the banana slices. (bbc, n.d.) Before placing them over the toast, pan searing the bananas releases the natural sugars, making them sweet. Therefore, no added sugar is needed to caramelize them. (thebakermama, n.d.) Additionally various toppings can be used to garnish the toast. One can sprinkle cinnamon, granola, chia seeds, coconut flakes or flakes seeds over the dish to make it more nutritious or enhance the taste. (Livesimply, n.d.) Breakfast Sandwich or Burrito ============================= Sandwiches ---------- (spruce, n.d.) Breakfast sandwiches are quick and easy to make. Typically, they comprise of bacon, eggs and cheese. But due to the versatility of the dish one can experiment with various types of vegetables, fruits, sauces, cheese and bread. How to make sandwiches and the elements it comprises of is discussed in depth in Unit 6. Guidelines ---------- - A perfect sandwich has six key components: sweet, salty, fatty, acidic, creamy, and crunchy. Each bite is enticing due to the blend of flavours and textures. - Combining ingredients that stack or stick to each other is an important skill. Mayonnaise serves as a terrific foundation and glue to keep everything together, resulting in a sandwich that holds together until the very last bite. - Melted cheese also helps slippery items stay put. - The largest ingredient of the sandwich (think the burger part of the burger) should sit at the bottom, so the other ingredients don\'t get smashed out. Points to keep in mind ---------------------- - Tinfoil works wonders for keeping sandwiches hot and toasty long after you\'ve made them. - For added crunch, try toasting bread or pan frying it with some butter. - Use ingredients that "go" or grow together - i.e., foods that come from the same area, region, or season often taste better together like tomatoes and basil, or pineapple and cilantro, or sage and pumpkin. - When incorporating eggs into sandwiches, there's a ton of ways to get different textures - poached, fried, sunny side, scrambled, over easy, over medium, soft boiled, hard-boiled, marbleized, sous vide, etc... Classic Examples: ----------------- - Croissant, Medium Boiled Egg, Apple, Brie, Honey and Nuts - Ciabatta, Fried Egg, Pesto, Tomato, Basil and Mozzarella - Toasted Sourdough, Pimento Cheese, Fried Egg, Sausage and Butter Lettuce - Bagel, Cream Cheese, Smoked Salmon, Soft Boiled Egg, Grilled Asparagus and Dill - Toasted Whole Grain, Avocado, Sriracha, Soft Boiled Egg, and Swiss Cheese Breakfast Burrito ----------------- The principle of making a breakfast burrito is very similar to that of a breakfast sandwich. The difference lies in the use of a flour tortilla instead of bread. Breakfast burritos tend to use scrambled eggs the most since they can be contained well. Ham, chorizo, and bacon are common meat toppings, which can easily be switched to vegan alternatives. Since a burrito is traditionally Mexican, often Mexican elements are used in a breakfast burrito. Salsa, guacamole, sour cream, grated cheese and even refried beans are a common occurrence. However, if one prefers more delicate flavours, try less conventional combinations. To ensure success, it is important to have all ingredients ready before assembling the burrito. (spruce, n.d.) Biscuits & Gravy (America) ========================== Biscuits and gravy are a traditional breakfast dish in the United States of America, particularly in the South. It consists of tender dough biscuits coated with a rich gravy made from the drippings of pork sausages, flour, and milk. (tasteatlas, n.d.) Biscuits and gravy were popular among sawmill workers who needed robust, bone-sticking meals to get them through the long and gruelling workday. The ideal flour for biscuits is a self-rising flour with lesser protein content. Lesser protein content results in lesser gluten formation, which gives the biscuit a tender touch. All-purpose flour can also be used to achieve good results. Simply try making self-rising flour by combining 1 ½ teaspoons baking powder and ¼ teaspoon fine salt in each cup of all-purpose flour. While the type of flour used to make biscuits is vital, so is the way the dough is handled. You don\'t want to overwork your biscuits; heated dough will quickly melt the butter, resulting in tough versus flaky layers. Fold the dough over on itself a few times to form flaky layers, but not too many times that the dough becomes tough. Once the biscuits are in the oven, you\'ll have plenty of time to make the gravy. Depending on the sausage, you may need to add a little extra fat to the pan after cooking the sausage to produce the roux (flour-fat combination). Bacon fat adds a smokey flavour to the roux, but butter or oil will also work. Using a cast-iron skillet to prepare the gravy will keep it warm while your biscuits are cooked and cooled, but you can easily add a dash more milk if it becomes too thick while you\'re waiting. (spruce, n.d.) Quiche (France) =============== Quiche is the quintessential cafe breakfast. It is typically made with a pastry crust and a filling of eggs, milk or cream, cheese, and various ingredients such as vegetables, meat, or seafood. The filling is poured into the pastry crust and then baked until the eggs are set, and the crust is golden brown. Quiche originated in the Alsace-Lorraine region of what is now France. Guidelines ---------- - Blind baking is required for the best quiches to have a buttery, crunchy crust. Blind baking a pie crust implies baking it partially or entirely before filling it. - Bake a creamy, custardy centre until the outside edge is crisp but the centre still jiggles slightly. To check the temperature in the centre of the quiche, use an instant-read thermometer. You want a temperature of 71°C-74°C (160°F to 165°F). - For the best flavour and texture, flavourful mix-ins must be cooked, seasoned to taste, and cut into bite-sized pieces. Additions --------- In quiche, nearly every cooked vegetable will work. Sautéed onions, shallots, or leeks; sautéed or roasted mushrooms; roasted winter squash; blistered cherry tomatoes; sautéed greens (drained of excessive liquid); broccoli or asparagus; and even roasted garlic are all excellent choices. Because much of the prep work has been done, leftover cooked vegetables are an excellent choice for quiche. The reason cooked vegetables work so well, is the minimal water content in them. Any excess moisture in the quiche will make it harder for the egg to set just right, leading to a runny or watery quiche. Choosing cheeses for Quiche --------------------------- Quiche is great with melted or soft cheeses. Shredded Cheddar, Swiss or *gruyère,* mild gouda, pepper jack, low-moisture mozzarella, and fontina are all good options. Some crumbly cheeses, such as fresh goat cheese *(chèvre)* and feta, are also delicious. In general, very hard cheeses are not the greatest since they lack the desired cheese pull effect, but combining a softer melty cheese with a piece of super-flavourful hard cheese like Parmigiano-Reggiano or pecorino is a terrific way to have it all. (spruce, n.d.) Variations ---------- ### Custardy Quiche A custardy quiche can be one that has just begun to set. It is creamy and has a small jiggle. To make a custardy quiche, use a low egg-to-milk or cream ratio, such as 3 big eggs to 2 cups of dairy. ### Eggy Quiche An eggy quiche is stiffer compared to a custardy *quiche*. An eggy quiche must have a higher egg-to-dairy ratio. Use four to six eggs and one to two cups of dairy, noting that less dairy and more eggs will result in a firmer, more egg-flavoured quiche. ### \"Fully Loaded\" Quiche For a richly textured and flavourful quiche, use at least one cup or up to one and a half cups of your preference mix-ins. To ensure that your mix-ins are uniformly distributed throughout the quiche, slice or cut them into tiny pieces. This will also make slicing and eating more convenient. More than one and a half cups of mix-ins may be added but your quiche slices will lose structural integrity. Breakfast Bites & Bowls ======================= Breakfast Bowls --------------- (Spruce, n.d.) A breakfast bowl is great if you are looking for a quick, easy, and satisfying breakfast that will keep you going all morning. These bowls are a great alternative to grab-and-go bars or lacklustre cereal. A number of business people will reach for a meal like this in the morning as it doesn't require too much commitment when it comes to eating the meal. It is well rounded, complete and tasty, all factors a rushed guest in the morning is looking for. Both sweet and savoury versions of a breakfast bowl may be prepared. Great examples of a savoury bowl are a Breakfast salad bowl with a grain of some sort. Pretty much all the toppings we discussed for breakfast sandwiches and burritos can be used to build a breakfast bowl. Sweet bowls by comparison may be smoothie bowls or flavourful oats. - Berry Acai Smoothie Bowl - Vegan Banana Split Breakfast Bowl - Blueberry Oatmeal Super Food Protein Bowl - Chickpea Breakfast Burrito Bowl []{#_Toc160104658.anchor}Breakfast bites Breakfast bites are extremely adaptable and may be prepared and frozen ahead of time. They are like mini quiches, but without the puff pastry. Milk, eggs, and seasonings are combined and placed into muffin tins and allowed to cook until set. These can be eaten hot or cold. Typically, a large batch is prepared in order to be frozen. The frozen muffins are reheated in the microwave or oven before being served. Vegetables like spinach, tomatoes, potatoes, carrots, etc could be added. Meat, sausages, cheese, bacon, sea food could also be added too. But these need to be precooked. Hash brown egg bites have a crispy hash brown as a base. These breakfast dishes are compact and mess-free. Small servings that can be eaten in 2-3 bites. Just like the breakafats bowls, it's a popular breakfast for the working community that has limited time in the morning. It is packed with nutrition and taste. They may include sweet or savoury muffins, mini versions of dishes such as quiches, pancakes, frittatas, or even individual egg tarts. Some classic recipes include: Banana and blueberry muffins, sausage and scallion egg muffins, mini quiches, mini cheese and spinach frittatas. (spruce, n.d.) (BBC, n.d.) (allrecipes, n.d.) Full English/Irish Breakfast ============================ (spruce, n.d.) The full English breakfast is well recognised throughout the United Kingdom and Ireland. It is not typically consumed daily, but rather on weekends and holidays. The phrase \"full\" refers to the fact that the breakfast is, full of various items. It is served at breakfast time, but it is also popular throughout the day, frequently substituting lunch, due to its large portion size. It is especially popular in bed and breakfast establishments, where no visit would be complete without one. Components ---------- Bacon, eggs, and sausages (sometimes known as bangers in the United Kingdom) form the foundation of the full breakfast. The dish is typically served with grilled tomatoes, mushrooms, fried onions, bread, and marmalade. A cup of tea or coffee is a popular and traditional breakfast beverage. The origins of the breakfast are unclear and believed to have originated in rural England as a sustaining meal to carry workers through a long morning. Variations Throughout the U.K. ------------------------------ Each country in the U.K. and Ireland also has its choice of usual accompaniments. Some of the varied components that you may expect to find in the regional variant include the full English plus a few regional favourites such as: - Full English breakfast: Black pudding (sausage), baked beans, bubble and squeak (potatoes and cabbage), and fried bread - Full Scottish: Potato scones (tattie scones), haggis, and oatcakes - Full Irish: Soda bread There are up to 40 interchangeable items in a full breakfast you can get in the U.K. These dishes include different types of breads, pancakes, meats, fish, and potato items. Most meat proteins on the plate will come in the form of bacon and sausage, but you can also find a variety of fish dishes and other proteins. Crumpets are a classic afternoon tea delicacy, especially when served warm with plenty of butter. It is often consumed in the mornings as a quick on-the-go meal. The extra yeast in the batter produces a soft texture and delicate holes on top, which are ideal for soaking up jam and butter. Crumpets are popular in the United Kingdom and frequently feature at British teatime.They first appeared in the 17th century as thin pancakes prepared with flour, milk, and eggs. Today\'s crumpets, on the other hand, most likely evolved during the Victorian era, when bakers introduced yeast and eventually baking powder to the mix. Traditionally, the batter is put onto a griddle or baking sheet equipped with special crumpet rings and baked on only one side, leaving the uncooked soft, spongelike top with distinctive nooks and crannies. (archive, n.d.) - remove please Vegetable Preparations served at breakfast ========================================== There are multiple ways one can add vegetables to their morning meal. While vegetables at breakfast time are not crucial, ideally, they should also not be avoided. Here are some of the most common ways to eat vegetables in the morning: Breakfast Salads ---------------- Salads are a great way to incorporate nutritious meals for breakfast. Most hotels offer an extensive salad bar at the breakfast buffet purely for this reason. It might be a niche space, but a salad can be a great refreshing way to start your day. The common components that make up a breakfast salad are: - **Greens** - Breakfast salads often start with a bed of greens such as spinach, kale, arugula or any other lettuce available. - **Protein** - Adding a source of protein to a breakfast salad can help keep one feeling full throughout the morning. Some common protein sources for breakfast salads include eggs, bacon, smoked salmon, or tofu. - **Fruit** - Including fresh fruit in a breakfast salad can add a touch of sweetness and provide some additional nutrients. Some popular fruit options include berries, sliced apples, or citrus fruits. - **Nuts and seeds** - Adding nuts or seeds helps add healthy fats as well as texture to a salad. Try adding sliced almonds, pumpkin seeds, or flax seeds or even some dried fruit. - **Dressing** - Finally, a dressing can tie all of the components of a breakfast salad together. For a healthy option, try using a vinaigrette made with olive oil and vinegar or lemon juice. Overall, a breakfast salad is a versatile and healthy meal option that can be customized to a guest's preferences and dietary restrictions. Frittatas and Omelettes ----------------------- The inclusion of vegetables in frittatas and omelettes is discussed in depth earlier in this Unit. Veggie Hashbrowns ----------------- Adding vegetables to hashbrown preparations is a great way to not only boost the flavour and texture of the dish but also give it a boost in nutrients and fibre. On Toast -------- Similar to adding avocado on toast, one can add roasted asparagus, tomatoes, roasted bell peppers, sliced radishes, or carrot ribbons to make a more nutritious (and visually appealing) breakfast. Veggie Breakfast burritos. -------------------------- Breakfast burritos consist of scrambled eggs, beans, sausages, and vegetables wrapped in flour tortillas, often featuring tomatoes and avocados. They are highly capable of accommodating a substantial dose of vegetables. Savoury Smoothies ----------------- A smoothie is a convenient and tasty way of incorporating vegetables into breakfast meals. A person can blend various vegetables such as kale, carrots, beetroots etc. to make a refreshing morning breakfast smoothie. One can mix and match according to taste. Ingredients such as dates, cinnamon and nutmeg can be added to add flavour to the breakfast smoothie. (allrecipes, n.d.)
