Alcohols
- An alcohol has a hydroxyl group (-OH)
- Primary alcohol (-OH) group attached to a carbon that is bonded to only one other carbon atom
- Secondary alcohol (-OH) group attached to a carbon atom that is bonded to two other carbon atoms
- Tertiary alcohol (-OH) group attached to a carbon atom that is bonded to three other carbon atoms
Ethers
- An ether has an oxygen atom connected to two carbon atoms
Amines
- An amine has an amino group (nitrogen atom bonded to one, two, or three carbon atoms)
- Primary amine (1°) has nitrogen bonded to two hydrogens and one carbon group
- Secondary amine (2°) has nitrogen bonded to one hydrogen and two carbon groups
- Tertiary amine (3°) has nitrogen bonded to three carbon groups
Aldehydes
- Aldehydes have a carbonyl group (C=O) bonded to a hydrogen
- The simplest aldehyde is formaldehyde (CH2O)
Ketones

Fatty Acids
- Fatty acids are long, unbranched-chain carboxylic acids
- Fatty acids are typically 12 to 20 carbons long
- Saturated fatty acids have only carbon-carbon single bonds
- Unsaturated fatty acids have at least one C=C double bond
- Cis unsaturated fatty acids are liquids at room temperature
- Trans fatty acids are solids or semi-solids at room temperature
- Cis fatty acids have hydrogen atoms on the same side of the carbon chain, creating a bend
- Trans fatty acids have hydrogen atoms on opposite sides of the carbon chain, allowing them to pack tightly
