Study Notes
Food Labeling - I
- Food labeling is crucial as people want to know if the food has nutritional value, not just if it's safe.
- Expanded nutritional guidelines for food labeling exist for various food types.
- UK food labeling laws are complex due to numerous reforms, while the USA uses FDA regulations.
- Basic food product information must be displayed.
Information Required on Food Products
- Product name: Clear and descriptive. Made-up names need food descriptions. Processed food needs the process stated. Names must distinguish similar products. Example: "orange drink" has oranges, "orange flavored drink" can be artificial.
- Ingredient list and quantity: Ingredients listed in descending order of weight (unless <5g), including additives and water. Allergens must be indicated (EU regulation 2004).
- Allergenic ingredients: From November 2005, labels must clearly show if a food contains any allergens such as celery, cereals containing gluten, milk, eggs, fish, mustard, soybeans, peanuts, sesame seeds, or sulfur dioxide and sulphites at levels over 10 gm per kg or liter.
- Nutritional information: Required if the manufacturer makes claims (e.g., "low in sugar"). Nutritional data is often presented in a table format.
- Medicinal or nutritional claims: These claims are strictly regulated. Claims like treating or preventing diseases are prohibited. Specific wording for reduced fat or high vitamins are required.
- Shelf life or date tagging: Labels display how long the product is good for after purchase/opening.
- Use by Date: Followed by the day and month of consumption. For cold foods like fish, meat, dairy, and ready-to-eat products.
- Best Before Date: Primarily about food quality; doesn't mean the food is unsafe after the date. Used for foods with degradation points. Best before + day (foods < 3 months), best before + month (3-18 months), best before + year (over 18 months).
- Storage instructions: Details on proper storage conditions are given to maintain freshness and prevent spoilage/food poisoning.
- Name and address of manufacturer, packer, or seller: Contact information for the food producer, listed on the packaging.
- Country of origin: Crucial information. Prevents misleading names (e.g., "English Brie Cheese" made in France).
- Weight or volume: Label includes measured quantities.
- Instructions of use: Includes steps on food preparation/cooking if applicable; should include warnings to ensure best use and prevent food poisoning (e.g. heating to a core temperature of 75°C).
Presentation and Sectioning
- Presentation: Labels must be clear and legible in English (other languages may also be included).
- Sectioning: Essential information (e.g., product name, date, weight, quantity, and alcohol content (if applicable)) should be presented together.
