- Los carboidrats son fonts d'energia rapida.

- Actualament classificats coma polihidroxialdehids o polihidroxicetones.
- Tres classes principals: monosacàrids, oligosacàrids (disacàrids) e polisacàrids.
Monosacàrids
- Composts cristal·lins solubles en aigua.
- Aldehids o cetones alifàtiques amb un grup carbonil e un o mès grups hidroxil.
- També anomenats sucres simples o unicells.
- Els hexoses més comuns son la glucosa, fructosa e galactosa.
- Els pentoses més comuns son l'arabinosa e l'xilosa.
Oligosacàrids
- Polymers de monosacàrids.
- Pes molecular relativament baix (menys de 20 unitats).
- Units per enllaços glicosídics.
- Disacàrids exemples: sacarosa, lactosa e maltosa.
Polisacàrids
- Polymers de monosacàrids amb un pes molecular elevad.
- Mès de 20 unitats.
- Exemples: glucogen (forma de reserva d'energia dels animals), midó (forma de reserva d'energia de las plantes), celulosa (fibra basada en beta-glucosa), inulina (reserva de fructosa en algunes plantes).
- Homopolisacàrids: contenen un sol tipus de monosacàrid.
- Heteropolisacàrids: contenen mès d'un tipus de monosacàrid.
Nomenclatura dels carboidrats
- El nom de cada sucre acaba en "-osa" (exemple: glucosa, fructosa).
- També s'anomenen per el seu grup funcional (aldehid –aldo–, cetona –ceto–) e el nombre de carbonis (pent, hex, etc.).
- Exemples: glucosa (aldohexosa), fructosa (cetohexosa), ribosa (aldopentosa).
