**REGION 4B -- MIMAROPA** **FOOD AND DELICACIES OF THE REGION** **SUMAN SA LIHIYA** - A rice cake with latik sauce, famous in Oriental Mindoro - Made with lye water wrapped in wilted banana leaves and cooked in boiling water. **BIBINGKANG LALAKI** - [Bibingka version of Marinduque], made with tuba (coconut wine) instead of yeast, which keeps the inside moist and pudding like. **BOKNOY SIOPAO** - The difference from the usual siopao is the sauce wherein it is already inside the siopao **GINATAANG PUSO NG SAGING** - A traditional Filipino dish originating from occidental Mindoro, made with a combination of banana blossoms, diced pork, and chili peppers, cooked in coconut sauce. **ADOBONG PUGITA** - A Filipino specialty originating from Occidental Mindoro, made with mature octopus that's cooked in a combination of vinegar and soy sauce. **TAGHILAW** - A Filipino stew of pork and offal such as intestines, liver, and kidneys sauteed with garlic and onions then cooked in vinegar. - A popular dish in Romblon, similar to the preparation of "dinuguan". **TAMILOK** - It is a mollusk living inside the branches of mangrove trees, found in Palawan. - The head and feet must be removed first, squeeze out the feces then in a mixture of coconut vinegar, lime juice, chili and salt. **CROCODILE SISIG** - Another popular exotic food in Palawan. - According to locals, the taste of crocodile meat is similar to chicken, and believed to be healthy due to its high protein and low-fat composition. **REGION 6 -- WESTERN VISAYAS** **FOOD AND DELICACIES OF THE REGION** **Chicken Binakol** - An Ilonggo specialty similar to tinola, but with a twist -- the use of coconut juice as base, with slivers of coconut fresh added to the recipe. **Inubarang Manok** - A popular Visayan chicken dish originated from Aklan - The chicken is cooked with coconut milk and pieces of "ubad" **Tinu-om** - An Ilonggo chicken soup dish from Cabanatuan, marinated with tomatoes, garlic, onions and lemon grass them wrapped in banana leaves. **Pinasugbo** - Also known as consilva, one of the favorite delicacies in the region. Made from thinly sliced saba bananas that are deep-fried and coated with caramelized sugar and sesame seeds. **Mango pizza** - A must try delicacy in The Pitstop, Jordan, Guimaras - The pizza is topped with thinly sliced Guimaras Mangoes, cheese, drizzled with cashew bits and topped with sliced green peppers **Piaya** - A flat, unleavened bread with muscovado sugar filling, simple but crispy and tasty - One of the famous delicacies in Negros Occidental. **REGION 7 -- CENTRAL VISAYAS** **FOOD AND DELICACIES OF THE REGION** **Cebu Lechon** - culinary tradition where a whole pig is stuffed with a fragrant mix of local herbs at the belly and then slow-roasted over hot coals to perfection **Chorizo de Cebu** - A small round processed meat that is juicy and sweet in taste - It has a pale red color, but it will be a red-brown hue when cooked **Puto Maya** - A type of rice cake from Cebu, made of glutinous rice, fresh ginger and sweetened milk - It is served with fresh, ripe mangoes and a cup of "sikwate". **Pintos** - Originally made from the city of Bogo - A special delicacy made of ground corn, cheese and coconut strips, and wrapped with corn husk. **Masareal** - A native delicacy made of peanut, milk, and sugar. It is a rectangular shape packed on a white paper - Originated in Mandaue City, Cebu **Dried Mangoes** - The most popular delicacy in Cebu - These are chewy and sweet bits of ripe mangoes dried out under the sun **Peanut Kisses** - Bohol's version of Hershey's Kisses - These miniature chocolate hills\' shaped cookies are made up of high-grade peanuts, cane sugar, egg whites and vanilla. **Kalamay** - A sticky sweet delicacy in a coconut shell from Bohol made of coconut milk, brown sugar, and ground glutinous rice - Kalamay is a local term for sugar in the Visayas Region **Dumaguete Express** - Bicol express version of Dumaguete but consists of fresh seafood cooked in a spicy coconut sauce. **Silvanas** - Cookie version of a Sans Rival - These are crunchy and creamy frozen cookies consisting of a layer of buttercream sandwiched between two cashew-meringue wafers coated with cookie crumbs
