Introduction to Yogurt and Cream Yogurt and cream are two common dairy products used in a variety of dishes. They can add flavour and texture to many recipes, from breakfast dishes to creamy pasta sauces. In food preparation and nutrition, it's important to understand the different types of yogurt and cream and how they can be used in cooking. For example, Greek yogurt is thicker than regular yogurt and can be used to create a creamier texture in dishes. Similarly, double cream is a popular ingredient in desserts because of its rich flavour and texture. The nutrients in yogurt are the same as for milk. They contain HBV protein, calcium and vitamins A, D and the B group. Cream is mostly fat, with clotted cream having the highest percentage of all creams. the fat content ranges from 18-55% - this is why it should only be eaten occasionally due to its links with CHD and raised cholesterol levels. Because it has a lot of fat, the other nutrients are present in lower amounts - low HBV protein, low calcium and low vitamins A and D. Both yogurt and cream should be stored in the fridge at between 1 and 5 degrees C. They will have a use by date; some yogurts are long life, but bio types tend to have shorter dates. Some cream is longer life and is called UHT; once opened it should be treated the same as fresh cream.
