KITCHEN TYPES & LAYOUT OBJECTIVES: Identify the types of kitchen Enumerate the work areas in the kitchen The kitchen layout is the shape that is made by the arrangement of the counter top, major appliances and storage areas. This floor plan creates the kitchen's work triangle – the path that you make when moving from the refrigerator to the sink, to the range to prepare a meal. Technical Terms: Work Centers – focused around major appliances – refrigerator-freezer, range, or sink. These centers make possible an orderly flow of activities connected with food storage, preparation, cooking serving, and clean-up. Work Flow – where work is done most efficiently when it flows in a natural progression, either from left to right or right to left. Work Simplification – means doing the job in the easiest, simplest and quickest way. Work Station – simply means a specific work area where a particular kind of food is produced or a specific job is done. Work Triangle – an imaginary line drawn from each of the three primary work stations in the kitchen, and avoid traffic flow problems. Kitchen work stations/areas 1. The receiving area - includes an outside platform or loading dock, adjacent floor space that is large enough to check, examine, weigh, and count food when delivered. 2. The food storage area - refrigerator and pantry are the major items here. Cabinetry like lazy susan or swing-out pantry units adds function and convenience. Options like wine racks, spice racks, and roll-out trays help to organize the groceries. 3. The preparation - usually located near the cooking area, the preparation area is accessible to food storage facilities and all kitchen tools and equipment. Range, oven, microwave, and smaller appliances are found in this area. Counter space is important in this section. Conserve space by moving appliances off the counter with appliance garage cabinets and space-saving ideas like towel rods and pot lid racks. 4. The cooking area- the cooking range and the oven are the major equipment housed in this area, which should be placed next to the preparation area for easy access to the prepared food ingredients. If the space beside the sink is not enough, a small table may be used. 5. The clean-up or washing area - Everyone's least favorite activity is one of the kitchen's most important - clean-up. This area is home to the sink, which is the very essential equipment in this area. The food is washed here before preparation. Cabinetry for this station is designed to organize with the trash bin cabinet and roll out tray baskets for storage convenience. 6. The support services area- is also called as auxiliary services area. Space for all employees' restrooms, lockers, shower, and hand washing facilities are found here. Space for garbage cans must be provided, preferably near the back entrance. TYPES OF KITCHEN 1. The one-wall / Pullman kitchen – designed for homes or apartments, offers a very open and airy feel. The three work areas are placed along one wall only. Applicable to apartments and small houses due to limited space. Small moveable table can provide for dining purposes. 2. Two wall or Galley kitchen - good for long but narrow spaces. It is great for small kitchen. Appliances are close to one another. It is easy for one cook to maneuver. 3. L-shaped Kitchen – the most flexible and popular, providing a compact triangle. It is step-saving due to continuous flow of work within a small area. Major appliances can be placed in a variety of areas. Work areas are closed to each other. 4. U-shaped Kitchen or horseshoe kitchen – popular in large and small homes. It has an efficient work triangle, can convert one cabinet leg into a breakfast bar. Work can be done left to right or right to left. 5.G shaped Kitchen – built very much like the U shaped with the addition of elongated partial wall. It is ideal for larger families needing extra storage space. 6. Peninsula or Island Shaped Kitchen – good for many persons working at the same time. Most often seen in L-shaped kitchen but require more working spaces. Ideal place to add extra sink or an island grill.
