**LADIES & GENTLEMEN WELCOME TO** **THE OTHER ROOf** **THE BARTENDING JOURNEY \#1** ***Notes to Junior Bartenders:*** Congratulations! You are now part of The Other Room family The first step of your journey will be making sure that you master by heart the floor service first. Being behind the bar without having previously been on the floor will not make you a bartender at all. It is crucial to know how to make feel people welcome and also how to interact with them, and at the same time it will make you understand how tough the service on the floor is, and be more understanding and helpful towards your colleague. The floor service is far away from being easy. You will feel uncomfortable many times. And that will happen because your knowledge sucks. Customers will ask you questions about the drinks, the spirits, the ingredients, the combination of flavours and you will be lost. The sooner you put effort in learning the basics, the sooner you will feel comfortable and enjoy the interactions with guests by telling them stories about the origins of the drinks, the recipes, and so on... The first step which will have to happen within the first 5 working days, will be memorizing all drinks names, garnishes, presentation, ingredients, flavour profiles of our Signature drinks. In this period, you will be tasting every drink that is going out of the bar. Make sure that you master basic knowledge of products (what is Vodka, what is Gin, etc\...) as well as being able of fluently explaining our concept in ***[EASY]*** words. *[Our products are unique. We create all of them. You will only be able to try them here and nowhere else in the world. From Rum to whisky to tequila, each one of them is something you have never seen anywhere before.]* Remember that all knowledge is interlinked with each other. Therefore, while you are focusing on learning the signatures, you will realize that you will have to learn the classics as well, seen that our drinks are twist on classic cocktails. These drinks date back to up to 300 years ago and even more. The second step will be memorizing the classics (only 50 drinks to start with). At this stage, we are not asking you to memorize the recipes yet, but yes, the ingredients and the story behind. How fast you will start being behind the bar as a barback, depends on how much effort you put in learning and how fast you manage to learn and memorize it all. Barbacking may sound easy as well, but it will only be easy if executed right. Organization and optimization of timings and procedures is the only way. Barbacking procedures will be explained to you in a full day training behind the bar. At this stage, you will be able to start making home-made simple ingredients like syrups. While barbacking you will also have to put effort in memorizing all the recipes of our signature cocktails by heart. When we say memorizing by heart it means that you will be asked to write all the recipes down without prior notice. You will not start your apprentice period until all recipes, measurements, garnishes, glassware, presentations, taste profiles, are all correct. Once again, how fast you will start your apprenticeship, depends on how much effort you put in learning and how fast you manage to learn and memorize it all. ***[Congratulations!!]*** Now you are finally an apprentice. At this stage, you are already mastering the following points: Floor Service (opening and closing procedures) Interaction with guests Signature Cocktail Recipes Classic Cocktails names and ingredients Basic Product Knowledge Barbacking Before you are able to make your first drink, it is now crucial that we learn the recipes of those 50 drinks that we have already memorized earlier. Once again you will be asked to write these recipes down without prior notice. Recipes of the 50 classics will be provided to you once you reach this stage. Once you know all these 50 cocktails by heart, you are now ready to take your journey into the fun cocktail making world. You have chosen possibly the best profession in the world!! You will now be able to make our signature cocktails under the supervision of senior bartenders. Senior bartenders will ask you which drinks to make and you will always taste the drink before shaking and after shaking, and you **MUST** let the senior bartender taste every drink you are preparing. Your first drinks will be on weekdays nights when the pace is slow. Efficiency, consistency, tidiness, timing, and more points will be taken into consideration to assess your work. A full training day on stirring techniques, shaking techniques, order of cocktail making, drinks priority and more, will be conducted at this stage. A crucial point is that the working station **MUST** be clean and impeccable every time a drink is finished. Drink can only be considered finished and served **ONLY** when all shakers and tools have been cleaned. Every drink **MUST** be out in 4min. Your apprenticeship journey is full of fun and hard work. At this stage, you will be able to start batching pre-batched cocktails. Following recipes is crucial. Always make a batch of the product with the written file of recipes in front of you and first checking with Senior Bartenders. In this period, you will have to try all of our Products and Finished Products and memorize the flavour and taste profile of all of them. It is mandatory to master this stage before you can become and call yourself a Bartender. **This is stage number 1 of Bartending at The Other Room.** Stage number 2 and number 3 will be shared with you only when completed this one. Expected time of completion of stage number 1 is 6 months from your first day. ***If you have been working already for over 6 months ask yourself: Am I there yet?*** If not then please roll up your sleeves and let's get some work done
