Modern Cooking Equipment ======================== Several food service operations have discovered ease in their production methods through modern kitchen equipment. It is possible to prepare some foods further in advance and in larger quantities with sophisticated cooling, freezing, and heating equipment. Multi-unit businesses have a central commissary where they prepare food for all their units. A large quantity of the food is prepared, packaged, chilled, or frozen, and then heated or cooked to order in individual units. Sous vide --------- Sous vide, a French word translating to "under vacuum" refers to the process of vacuum-sealing food in a bag followed by cooking it to precision in a water bath. This technique helps to achieve the impossible under the umbrella of several cooking methods. It is so due to the lack of control overheat and temperature in the case of traditional methods of cooking. Hence, producing consistently excellent meals is very time-consuming and complex. Only a small proportion of the food in the center is cooked to the desired temperature while being overcooked on the outside. Vacuum Sealer ------------- A vacuum sealer seals your food by removing air from the space around inside the bag. A heated seal bar fuses the sides of the bag, enabling easy transport without spoilage, leakage, or pilferage. A vacuum sealer helps in the elimination of wastage which is crucial to any food service operation. As it helps in reducing the exposure to air, food tends to remain fresh and healthy. Products that are vacuum packed last up to 3 to 5 times longer than non-packaged foods. Air fryer An air fryer is an amped-up countertop convection oven. A heating mechanism and fan make up for the top section of an air fryer. When food is placed in a fryer-style basket of the air fryer, hot air gushes down and encircles the food. The rapid circulation of air makes food crisp. It is almost like deep frying without oil. In some cases, it becomes vital to flip or turn the food halfway through the cooking process to cook evenly. Cleaning the air fryer after every use is crucial. Thermomix --------- The Thermomix is a blender that stirs and cooks food at varied temperatures and speeds. It comes with a steamer attachment, a built-in scale and a touchscreen that helps the user enable the recipes. The Thermomix can boil, simmer, stew and cook. It helps chop and mince nuts, herbs, meats, and vegetables. Blending, grinding, whisking, and kneading the dough are some other special uses of the equipment. It helps acquire the perfect texture, consistency, and precision for each recipe. It also helps in cutting down the total preparation time by 70%. Pacojet ------- The Pacojet is a professional kitchen appliance used to micro-pure frozen foods into ultra-fine textures without the need to thaw. It was invented in the 1980s to create the most delicious ice creams. However, professional chefs started using the Pacojet to make much more than just ice cream and sorbets in a modern kitchen. Mousses, sauces, concentrates and soups are easily made with the Pacojet. It works by taking fresh ingredients and placing them into a Pacojet beaker to be frozen for at least 24 hours at -22°C. The freezing process can be sped up by usinh a blast freezer that improves the efficiency and effectiveness of the Pacojet. After successfully freezing, the beaker is then attached to the Pacojet machine, and the desired number of portions is selected. The precision blades then spin down inside the beaker that gives rise to the Pacotizing process. After this, the beaker is removed from the Pacojet, the final product is removed and served. Dehydrator ---------- A dehydrator is used to remove the moisture content from foods like fruits, meats, and vegetables by using hot air to do so. It comprises of trays, heating elements, vents, and a fan for circulation. The heating element of the dehydrator raises the temperature inside the machine and the fan circulates it evenly while the tray holds the food being dehydrated.
