substance that provides nourishment to an organism   Macronutrient—used by the body for energy Micronutrient—has many functions but does not provide energy Bioavailability –the extent to which a nutrient can be used by the body Palatability—acceptable or agreeable taste  How much an animal likes a food Acceptability – indicates whether amount of food eaten will be enough to meet caloric
