Study Notes
Beverages
- Beverages include liquids or liquorous foods, such as coffee, tea, cocoa, soft drinks, and alcohol-containing drinks.
- These beverages contain stimulants or flavoring agents that perform useful functions but are not essential for the body's proper functioning.
Types of Beverages
- Alcoholic beverages:
- Wines
- Malted beverages (beer)
- Distilled liquors
- Non-alcoholic beverages:
- Carbonated drinks
- Non-carbonated soft drinks
Coffee
- Coffee is an evergreen shrub or small tree indigenous to Central Africa and Asia.
- There are three main commercial species of coffee:
- Coffea arabica (supplies the largest and best quality of coffee beans)
- Coffea robusta (yields beans of lower quality)
- Coffea liberica (beans of still lower quality)
- Brazil is the largest producer of coffee in the world, while India's export is only about 4.5% of the total world export.
Coffee Characteristics
- Caffeine is present in coffee, tea, soft drinks, chocolates, and some nuts.
- Coffee flowers are white and sweet-smelling, producing green berries that turn red when ripe.
- The berry contains a mucilaginous pulp with two greenish-grey seeds or beans, each covered by a thin membrane, a silvery skin, and both are enclosed in a common husk-like membrane or parchment.
Coffee Processing
- Coffee processing consists of removing the skin, pulp, parchment, and silvery skin.
- The quality of the final product depends on the manner of processing.
- Two methods are employed for processing:
- Dry method: berries are sun-dried, and the coverings are removed by hulling.
- Wet method: the ripe fruits are squeezed in a pulping machine, and the mucilage is removed by spontaneous fermentation.
