Factors that Affect Food Choices
- Individual factors differ from person to person and include preferences, genes, knowledge, and health.
- Environmental factors influence food choices and include aspects of a setting, atmosphere, or location, such as layout, marketing, climate, weather, price, and availability.
- Indirect factors influence food choices, but not directly, and include government policy and climate change.
Food, Trade, and Health
- Agricultural, trade, and food policies have the potential to impact diets and nutrition, even if they are not explicitly designed for such purpose.
- There are two broad pathways through which policies influence diets: one acting through income and the other by changing food availability and/or relative food prices and/or preferences for food.
- Agricultural policies include domestic policies relating to inputs, agricultural production, and processing/transport, such as agricultural R&D and technology policies, market price support, input subsidies, and rural infrastructure policies.
- Trade policies include tariffs, nontariff barriers, and export bans during food price surges, and have mostly concerned liberalization to bring individual countries into line with rules relating to the WTO and regional trade agreements.
- Consumer/Food policies include policies applying directly at the level of food acquisition/purchase and consumption that are not primarily motivated by nutrition/health reasons, such as food subsidies and vouchers.
Health Care Organizations
- International Health is a field of health care that deals with health across regional or national boundaries.
