Cocoa beans held power and influence over many city-states, which often collected tribute in the form of cocoa beans. This was especially true for Mayan cities located in drier regions that couldn't cultivate cocoa themselves. # Mayan Food Flavourings The Mayans were quite advanced for their time and used many spices and plants/herbs to flavor their foods and drinks. Chili peppers were a common ingredient in Mayan recipes. Mayans also used vanilla and cinnamon to add flavor to their drinks. Honey was commonly used as a sweetener.
