Cocoa beans held power and influence over many city-states, which often demanded tribute in the form of cocoa beans. This was especially true for Mayan cities in drier regions that couldn't grow their own cocoa. # Mayan Food Flavourings The Mayans used many spices and herbs to flavor their food and drinks. A common ingredient was chili peppers. They also used vanilla and cinnamon to flavor their beverages. Honey served as a sweetener. A sauce made with avocado is also a popular Mayan dish today.
