Jaro History

Original name was Salog/Saro, also called "Ilaya" (mountain/dry land), and "llawod" (sea/wet land) for La Paz.
Was one of the richer areas in Iloilo City during the Spanish colonial period.

Iloilo Cuisine

Kansi: Sour beef soup similar to bulalo, with a tangy twist from batwan.

Patpat's Kansi House

Two types of kansi (beef soup): Laman (pure beef) and Kansi Lawas (includes marrow).
Created by an Iloilo woman who adapted a Bacolod recipe, adding batwan (sour fruit) and spices.
Opened in 1999 in Iloilo, expanded to other areas.
Considered a fusion of bulalo and sinigang, focusing on the meat and bones, with no vegetables.
Sourness comes from the local fruit batwan.
Located at the old Ledesma-Causing ancestral house, 125 Seminario Road, Jaro, Iloilo City.
