Jaro History
- Original name was Salog/Saro, also called "Ilaya" (mountain/dry land), and "llawod" (sea/wet land) for La Paz.
- Was one of the richer areas in Iloilo City during the Spanish colonial period.
- Center of trade and religious/economic power in the Visayas.
- Port on a navigable river facilitated trade with China and Siam.
- Many Spanish traders married and settled in the area in the Spanish period.
Iloilo Cuisine
- Biscocho: Toasted bread covered in butter and sugar, a famous pasalubong item from Iloilo.
- Found at Biscocho Haus (Jaro Plaza area).
- Kansi: Sour beef soup similar to bulalo, with a tangy twist from batwan.
- Found at Pat-Pat's Kansi (Jaro Plaza area).
- Jaro Ensaymada: Buttery and soft bread topped with cheese, often with coffee.
- Found at Taytay Bakery (near Jaro Plaza).
Patpat's Kansi House
- Two types of kansi (beef soup): Laman (pure beef) and Kansi Lawas (includes marrow).
- Created by an Iloilo woman who adapted a Bacolod recipe, adding batwan (sour fruit) and spices.
- Opened in 1999 in Iloilo, expanded to other areas.
