- Selection of farm animals is done in two stages, based on phenotypic characteristics.

Physical Characteristics
- General Appearance (20): Size, weight, leanness, angularity, temperament (docile, active, not ferocious), and dairy/breed characteristics.
- Head and Neck (10): Muzzle (wide, moist), nostrils (large), jaws (strong), face (clean-cut), facial veins (prominent), eyes (large, mild-bright), throat (graceful, folded dewlap).
- Forequarters (10): Withers (refined), freedom from fleshiness, shoulders (well attached), forelegs (well apart, strong).
