Table Setting Rules for Handling Dinnerware

  • Place and Remove Dishes: Use your four fingers to hold the lower edge of the plate, with your thumb along the upper edge
  • Position Plates: Lower plates onto the table ½ inch from the edge
  • Full Dinner Plates: Place the main item facing the customer unless the chef suggests otherwise
  • Holding Plates: Practice holding plates level with your arm extended
  • Underliners and Bread and Butter Plates: Use these when appropriate
  • Coffee and Teacups: Place with handles to the right, angled slightly toward 4 o’clock from the customer’s point of view

Table Setting Rules for Handling Glassware

  • Carry Stemware: Use a beverage tray for carrying clean empty stemware
  • Handle Stemware: Always hold stemware by the stem
  • Handle Tumbler Glasses: Hold at the bottom 1 ½ inch of the glass
  • Do Not Handle by Rims: Never hold glasses by the rim. The rim is weak.
  • Cleaning Glassware: Never use your fingers to clear a glass
  • Clearing Glassware: Use a beverage tray
  • Refilling Water: Refill water without lifting the glass from the table, or lift to refill, or remove the water pitcher
