Ingredients
- Bush’s baked beans (vegetarian) are required
- 1 bag of shredded carrots
- 1 large tomato
- Onion
- 3 scotch bonnet peppers (habanero pepper, preferably orange)
- 4 cloves of fresh garlic
- Tomato paste
- 1 red, 1 green, and 1 orange pepper
- Cilantro
Preparation
- Chop all the vegetables into small pieces and dice the tomatoes
Cooking Instructions
- First, fry the onions together with the habanero peppers, then add fresh crushed garlic
- Add curry powder, paprika, and any preferred spice after sautéing to your liking
- Six guns spice from South Africa or LA Flor Sazon classico spice can be used
- Salt or any seasoning that contains salt can be used if you do not have those spices
- Add 1 spoonful of tomato paste
- Stir so that everything is blended together
- Add diced tomato, without the red, green, and orange peppers
- Stir until it softens slightly
- Add shredded carrots
- Stir for about 3 minutes
- Add the baked beans, stir, and let simmer for about 5 to 7 minutes; avoid overcooking
- Add the chopped colorful peppers
- If the mixture looks too watery, add more tomato paste and stir until it blends into the beans
- Turn the heat down or off completely, then add the chopped cilantro when you are satisfied with the result
